Food Friday: Kale

It’s Kale month this month.

Ok, so I just made that up, but I’m going to share one of my best kale recipes with you, because, according to Organic, kale is the new beef.

This recipe will help you stay cool, don’t be afraid…

Great Green Smoothie:

To a blender add:

1/2 pound kale, tough stems removed
1 cup plain greek yogurt
1 cup sliced frozen peaches, or approx. 1 frozen peach, unsweetened
And 1 of the following of your choice:  either 1 whole carrot, 1/2 a banana, OR 1/2 cup frozen blueberries

Blend until smooth, pour into glasses and enjoy!

Serves approx. 2

Nutrition facts per serving: Protein 16, Carbs 25, Calories 166
